Sodium bicarbonate reacts with acids to form salts and carbonic acid, which immediately disintegrates into carbon dioxide and water:
NaHCO3 + HCl → NaCl + H2CO3
H2CO3 → H2O + CO2 ↑
In cooking such reactions often occur with acetic acid, sodium acetate to form:
NaHCO3 + CH3COOH → CH3COONa + H2O + CO2 ↑

The use of sodium bicarbonate
Sodium carbonate acidic (sodium bicarbonate) is used
